Top Chef All-Star Chef Angelo Sosa develops Shrimp Roll
Long lines and savory anticipation was the ambiance at The Kati Roll Company as Celebrity Chef Angelo Sosa, now starring on Bravo’s Top Chef All-Stars debuted the new Shrimp Masala Roll. Wearing a TKRC T-shirt, the Chef stood over an open grill cooking the shrimp to perfection and serving it up to customers, stopping briefly to greet his fans or give press interviews.
“It was so busy,” says Chef Angelo, “I was getting nervous since we were going to sell out of the shrimp.” And sell-out they did as customers left raving at the tasty addition to The Kati Roll Company’s menu.
The new roll features tender barbecued shrimp laden in coconut, warm spices and tangy flavors. The chef, known for bold and innovative interpretations of traditional favorites, has infused the kati roll with coastal ingredients.
“We’ve been experimenting with new roll flavors for sometime now,” says Payal Saha, founder of The Kati Roll Company. “Angelo’s vision for this new roll is an exciting direction for us. He has taken kati roll’s basic flavor profile and added to it by balancing the delicate taste of barbecued shrimp with exotic spices and flavors. The result is healthy and delicious.”
Sosa commented on the collaboration, “I am a huge fan of The Kati Roll Company and the intensity of their spice blends inspired me to go bold, but sustain balance with the freshness of the coconut-marinated shrimp. It was a great experience to work on my own interpretation of this classic Indian street food.”
The Shrimp Masala roll consists of shrimp marinated in coconut milk and chaat masala spices and is cooked over an open-flame grill. It is then placed in a warm paratha and topped with sweet and sour marinated red onions, birdseye chilis and finished with a swath of cilantro sauce.
The new roll is now available at all locations and is priced at $6.75. The Shrimp Masala Roll will be available for a limited time. The Kati Roll Company continues to offer its basic menu of 11 rolls, but has added an option of a healthier whole wheat roti (as the wrap) in addition to the original paratha.
Chef Angelo Sosa was a runner up in Top Chef Season Seven and is currently a contestant in Top Chef All-Stars. The 35-year-old chef has made a name for himself as the owner/chef of Asian-influenced sandwich restaurant Xie Xie. In his career, he has worked for such notable establishments as Jean Georges’ Dune and Spice Market and has been responsible for creating the menus for Stephen Starr’s NYC-based Buddakan.
When asked what Top Chef Challenge he would consider for The Kati Roll Company, the chef answered, “Take some cool ingredients like sea urchin or some other western flavors and fuse it together with Kati Roll’s signature tastes.”
The Kati Roll Company, which opened in 2002, has two locations in New York City and a third in London, England.
